Until recently, health care facilities have each had their own policies and definitions of dietary levels and textures. Such variation carries high risks for clients and patients who have dysphagia. For these reasons, an international team of professionals has worked through much research and many testing protocols to develop the International Dysphagia Diet Standardization Initiative (IDDSI). The protocols of this initiative include accessible testing methods and terminology that work in any part of the world and are applicable to people of all ages and all cultures.

This course will initially share some of the key research behind IDDSI to share the rationales and science supporting each level's definition. Then the IDDSI framework will be shared to include the description and testing methods for each level, along with the resources available from the IDDSI website.

1. The Need for IDDSI

Initially, this chapter will review the substantial need for standardized diet levels that will be used in all settings, for all ages, and with all cultures. Then the risks will be shared, based on prior diet standards, to stress how the IDDSI guidelines will minimize such risks and improve dietary safety.

2. The IDDSI Framework and Resources at a Glance: Liquids

This chapter will review the IDDSI level definitions, testing protocols, and details for each of the eight levels (0–7) within the IDDSI framework. Examples of each liquid level will be provided to help the learner differentiate each level.
